Continuing past

Spiritual Menu: AM Psalm 51; PM 69: 1-23; Jeremiah 12:1-16; Philippians 3:1-4; John 12:9-19

Now that I've been decently successful in working on a vegan lifestyle, I'm working on undertaking a new challenge: fried foods.  With Lent ending and me entering production, I didn't want to gain any weight because of my keeping crazy hours.  So I challenged the cast to also abstain from fried foods to make the transition.  I love what I've been finding recipe wise, today it's not thing special, just popcorn.

Popcorn
1 tbsp Safflower Oil
1/4 cup popcorn kernels (just enough to evenly cover the bottom of the pan)
Seasoning to taste.

Turn the stove on high heat. Put the safflower oil in a saucepan, then the kernels. Cover with a lid.  Swirl the popcorn around sporadically so that kernels don't burn.  Continue until the pops slow down.  Warning: Do not open lid before the kernels finish popping.  They have a tendency to fly!

Holy Week

So my 40 days are up, but this is Holy Week so it warrant recognition.  I'm still having trouble with my pictures, but here's the cool find of the week.  At Dairy Queen, the chicken wraps, if you omit the chicken and the cheese are vegan friendly.  But to really make it work, ask them to substitute the chicken for one onion ring.  A fried onion ring wrap - Amazing!  I think it's a go.

My phone still is not syncing to my computer for the photos.  I'm not sure what's going on.  I'll get to the bottom of this tomorrow.

Day 38: Back on track (and a few catch ups)

It is hard to keep a daily blog.  You really have to make sure it fits in the schedule. But I've honestly never really journaled consistently either.  Yet and still, here we are.

I'm posting the pictures I promised of the Veggie Lasagne with spinach, the cauliflower sauce, broccoli, and ground Pop Chips.

I also tried the Veggie Cheese and Rice Vegan Cheese.  I'm still not sure how they are - because I want to make sure I don't feel too heavy after eating them (you know what I mean).

Okay, so my phone is not syncing with my computer.  I'll post pictures tomorrow for sure.

Day 37: We're gonna finish strong

It just got hard all of a sudden!  And busy, but good things happening, for sure. I'm not with my phone at the moment, so all my pictures and the spiritual menu is not near me, but I'm working it out a little so that I can finish strong.  Today, I found the shreadded soy cheese option, which made things so wonderful. I love the options, I just don't want too much soy in my diet - which could prove to be an issue later on.  I promise pics tomorrow and another recipe. This week, I bought an acorn squash, the portobellos and some other cool things to play with.  Pretty excited!  Check me in the morning.

Day 30: No more breaks, new allergies, and vegan lasagne

Wow, I can't believe it's been an entire week!

Just like the not eating meat on Sunday's during Lent, I think I'm not going to take any days off from the blog.  I think it helps the regiment.  Besides that, I've been missing my favorite Romans passages!

I found out, the hard way, that I have another allergy.  It's not meat, or dairy, but a fruit - Olives (yes, they are a fruit).  I ate the veggie Sammie yesterday from Quiznos (with out the cheese) and I started swelling up in my mouth.  I thought nothing of it until my ears got involved and at 3am sitting in an emergency room hoping my ear wouldn't pop because it would hurt just that much.  This is difficult because olive oil is my substitute for vegetable oil as well as an ingredient I use on my hair and body very often.  The food part is not so hard - I'll use Safflower or Sunflower Oil to cook with.  I'm also not allergic to peanut oil, so that is an option as well.  But the body - guess I'll stick to Shea Butter for now.

Above all this week, I came up with a vegan lasagne recipe using the cauliflower sauce.  I haven't been able to purchase or make the soy cheese just yet, but that'll be next week.  The pic and recipe will be up tomorrow.

Day 23: It's Friday!

I'll admit I got a little behind on the reading for a second - you seriously can't miss a day with this!  I'm talking chapters behind.  I felt like I was cramming for a mid term trying to catch up.

Anyway, it's been a long day, yet again, so I decided to make cool things out of left overs.  Using the eggplant from earlier this week, I sauteed some onion and mushroom in olive oil, toasted vegan bread, added lettuce and the cauliflower sauce, and voila! Eggplant sandwich.   The pic isn't as clear, but it tastes amazing.

Day 22: Not sure where my cell phone went

Spiritual Menu: Psalm 42, 43; PM - Psalm 85-86; Jeremiah 10: 11-24; Romans 5: 12-21; John 8:21-32

I'm still super busy, which is annoying, but I really just can't complain. At least I have something to do.  As my subject reads, I'm not sure what I did with my cell phone, so I can't post the cool pictures of my vegan French Toast.  I do have an amazing recipe for it, though:

4 slices of vegan bread, toasted and slightly stale
1/2 cup apple sauce
3/4 cup rice milk
2 teaspoons flour
1 1/2 teaspoons cinnamon
1/8 teaspoon mace
1/4 teaspoon ginger
1/4 teaspoon all spice
Safflower Oil

Cut the bread into slices. Let them hang out on a plate for a while.  Mix apple sauce, rice milk, cinnamon, mace, ginger, flour, and all spice together in a bowl.  Heat the skillet up til hot, then about about a 1 tbsp of safflower oil (to coat the skillet).  Dip the bread slices into the mixture quickly, not letting them linger, the place them in the pan.  Brown on both sides.  Serve with maple syrup.
